During levels 1-4, the top crop is strawberries -- they earn 6.25 coins an hour. At level eight, raspberries become the top crop, earning 13 coins every hour.
Of course, this all depends on how much time you have available to play Farmville. If your time is limited, pumpkins are the best crop to plant, earning 4.75 coins per hour and taking eight hours to mature.
Another less time-demanding option opens up at level seven -- rice. Rice makes 4.25 coins an hour for 12 hours before it's ready for harvest, which means they take four more hours to mature and make 0.5 less coins an hour than pumpkins. That makes the two crops nearly equal, so the decision is really up to you.
If you have all the time in the world, stick to raspberries from levels 8-16. They mature extremely fast, being ready to harvest in two hours, and they yield 13 coins per hour, which is the highest amount of coins per hour for any crop at those levels.
